Full Job Description
To develop, lead and inspire a team of operational team members to provide exceptional service to our customers within the Pub at the NEC. Manage client relationships in a commercial manner ensuring compliance and company policies are adhered to. Manage service standards and staff development, drive food and beverage service and support service solutions that exceed new and existing customer requirements. Review sector business performance and ensure delivery of key financial targets in line with management and performance reporting. Demonstrate commercial value to your direct reports, line manager, and leadership teams, in line with the One Compass vision, values, and overall business strategy.,
- Deliver consistently high standards of cleanliness, quality, service, maintenance and atmosphere.
- Ensure all food, liquor and disposables are in correct areas in good time for event days and other events.
- Responsible for event day setup and make sure the retail and restaurant areas in the NEC are ready.
- Checking all areas - critical walks, line and spot checks.
- Ensure that opening and closing procedures are adhered to.
- Understand and support the ordering process and that delivery schedules are updated, and orders placed in time.
- Continually aware of the customer journey, pressure points and opportunities to observe, capture and act on client and customer feedback.
- Review wastage with the culinary team and cellar team, look at opportunities to control, educate and reduce to support overall GP% targets
- Drive top line / SPH - control production and wastage.
- Manage departmental maintenance log, ensuring resolutions are actioned.
- Manage business needs and performance expectations and standards.
- To champion HSE within the unit and lead by example, ensuring compliance with all regulations and statutory and legal requirements, including in respect of health and safety matters
- Setting quality and operational standards and upholding the same.
- Establish excellent relationships with clients, contractors, and other departments.
- Understand and analyse COS, VPM, liquor yields to aid decision making.
- Actively deal with customer feedback in a positive manner and advise the operations manager as appropriate.
- Solve operational issues / concerns in good time. Demonstrate proactive working practice.
- Ensure challenge 25 and RSA is strictly adhered to.
- Ensure that health, safety, hygiene rules and procedures are always followed as a priority. FINANCAL RESPONSIBILITY:
- To manage and take ownership for all costs associated with the operations under your management.
- To ensure that your team understand all areas of financial performance.
- Manage all aspects of labour scheduling.
- Investigate revenue shortfalls and cost overspend relating to financial results for the operations under your management and act where necessary.
- Drive spend per transaction values through maximising the sales opportunities that occur within the planning and operations stages for the event days.
- Actively monitor and improve the operating standards within the retail areas including service, product lines and operational procedures.
- Demonstrate excellent control of all operating costs in line with set targets.
- Minimise operating costs by using all equipment and products in accordance with company requirements.
- Ensures compliance to the company profit protection procedures and that venue security procedures are strictly adhered to.
- Ensure all stock takes are completed to deadlines, with any variances investigated.
- Work within all budget restrictions. PEOPLE MANAGEMENT:
- Sourcing and deployment - ensure that effective and robust recruitment plans and processes exist to source and deploy large volumes of casual workers per differing event requirements.
- Culture - Work closely with the management team to develop and sustain a high level of team energy and engagement, focused on great food and hospitality.
- Review and Develop - Conduct regular performance reviews and talent management / succession planning activity, based on agreed and measurable KPI's.
- Communications - ensure effective team communication flows (in all directions) throughout the venue. BUSINESS DEVELOPMENT
- To recommend and develop new products that reflect the current trends or provide an opportunity to improve the business.
- To recommend and develop new service styles and business opportunities that support growth of the business for both Levy & the client.
- To support and develop the company's image and standing within the local and business community.
- Demonstrate full alignment with the Levy and client vision and values by consistently doing the right things and celebrating successes.
- Liaising with culinary and marketing specialist colleagues to implement continuous food product development and drive footfall. Focusing on local, fresh produce.
- Liaison with 3rd party suppliers and contractors to underpin effective service delivery and product quality.
Experience in a public house, stadium or event catering environment essential. - Personal circumstances must allow working flexible hours to align with event activity.
- Strong leadership qualities and excellent communicator.
- Strong organization skills and commercial awareness - sees beyond the obvious and is resourceful in seizing opportunities and solving problems.
