Sous Chef - PAM Restaurant - London

PAM is seeking an experienced Sous Chef to support the Head Chef in leading an ambitious, ingredient-led kitchen. You will be central to daily operations-developing people, protecting standards and ensuring every service runs with precision, energy and care.What you'll do

• Support the Head Chef in all aspects of kitchen leadership, planning and service delivery.
• Lead services confidently, maintaining food quality, consistency, timing and presentation.
• Train, coach and inspire the brigade while promoting a respectful, accountable culture.
• Assist with menu development, tastings, recipe specifications and seasonal changes.
• Manage ordering, stock, food costs, rotas and waste within agreed targets.
• Maintain rigorous food safety, allergen, hygiene and health and safety standards.
  
  Excellent cooking skills, palate and knowledge of seasonal ingredients.
• Confident, fair and composed leadership during demanding services.
• Commercial awareness, including food cost, labour and stock control.
• A hands-on mentor with excellent organisation and communication skills.
