Small Plates Chef Modern Afro Fussion - Coulure Wine Shop and Tasting Room - London

We are a small wine bar (18 covers) with the largest collection of black owned wines in the UK. We are seeking a creative and passionate Small Plates Chef to lead our kitchen in executing an innovative menu focused on modern African and Diaspora-inspired small plates. In this role, you will elevate traditional Flavors-from West African suya and North African harissa to Caribbean jerk and East African spices-reimagining them into contemporary, beautifully presented tapas-style dishes. Core Responsibilities

• Menu Execution & Innovation: Prepare, cook, and present a dynamic menu of modern Afro-fusion small plates with high attention to detail and consistency.
• Station Management: Run and streamlined operation during peak service, ensuring ticket times are met without compromising quality.
• Ingredient Sourcing & Prep: Manage daily prep lists, butchery, and portion control, working with specialized spices, grains, and fresh ingredients.
• Kitchen Leadership: Maintain high standards of food safety, sanitation, and organization, while fostering a collaborative, positive team culture.
  
  Culinary Experience: Minimum 1-2 years of experience in a fast-paced kitchen, preferably with a focus on small plates, tapas, or modern upscale dining.
• Flavor Expertise: A deep appreciation for, or experience with, African, Caribbean, or Afro-fusion flavor profiles and cooking techniques.
• Plating Precision: Strong visual plating skills suited for a contemporary, photo-worthy dining experience.
• Efficiency: Ability to multi-task, stay calm under pressure, and work with a small front of house team to exceed dinner expectations.
