Night Baker - Roll Boys, London
We're looking for a reliable Night Baker to join our small team, producing fresh dough overnight ready for the morning team to shape, prove and bake each trading day. You'll handle dough production from scratch - mixing and portioning to our recipes and specs - keeping quality and consistency spot-on every single batch.
You'll work independently through the night, so we need someone self-sufficient, organised, very reliable and quality-driven, with strong attention to detail. Responsibilities include prepping doughs and batch quantities to the production plan, correct chilling and storage, keeping the kitchen clean-as-you-go, completing temperature and hygiene records, and leaving everything ready for a smooth morning handover.
Previous professional baking experience is essential (enriched doughs or viennoiserie a big plus). Level 2 Food Safety preferred, or willingness to complete it shortly after starting.
