Full Job Description
We are looking for an experienced and passionate Sushi Chef to join our kitchen team. The successful candidate will be responsible for preparing high-quality sushi and Japanese dishes while maintaining excellent standards of food safety, hygiene, presentation and consistency.,
- Prepare sushi, sashimi, nigiri, maki, uramaki and other Japanese dishes to a high standard.
- Prepare and handle fresh fish, seafood, rice, vegetables and other ingredients safely.
- Ensure sushi is presented attractively and consistently according to restaurant standards.
- Prepare sushi rice, sauces, garnishes and other ingredients required for service.
- Maintain excellent food hygiene and food safety standards at all times.
- Check the quality and freshness of ingredients before preparation and service.
- Store food correctly and monitor temperatures and use-by dates.
- Keep sushi preparation areas, equipment and refrigerators clean and organised.
- Minimise food waste and use ingredients efficiently.
- Follow portion-control and recipe standards.
- Work efficiently during busy service periods while maintaining quality.
- Communicate effectively with the Head Chef and kitchen team.
- Assist with stock control, ordering and daily kitchen preparation when required.
- Follow all company health, safety and hygiene procedures.
Previous experience as a Sushi Chef or in a professional Japanese kitchen. - Good knowledge of sushi preparation and Japanese cuisine.
- Strong knife skills and knowledge of fish preparation.
- Good understanding of food hygiene and allergen requirements.
- Ability to work under pressure in a busy restaurant environment.
- Good attention to detail and presentation.
- Reliable, organised and able to work effectively as part of a team., Passionate about Japanese food and sushi.
- Professional and hardworking attitude.

The role involves standing for long periods, working in a busy kitchen environment and handling food, knives and kitchen equipment safely. Evening, weekend and public-holiday work may be required depending on the restaurant's opening hours.
