ICC Wales - Senior Sous Chef

We're looking for a Senior Sous Chef to help lead a dynamic, high-performing brigade in a unique large-scale events environment. This is not your typical restaurant role - it's about precision, pace and producing exceptional food at scale, often delivering for hundreds or thousands of guests at once.

What you'll be doing
Supporting the Head Chef in leading kitchen operations for major conferences, banquets and events
Delivering high-volume, high-quality food production with consistency and attention to detail
Leading, motivating and developing a team of chefs within a fast-paced events kitchen
Working closely with the events and operations teams to ensure seamless service delivery
Planning and executing menus designed for large-scale production without compromising quality
Managing stock, ordering and kitchen controls while maintaining excellent food margins
Ensuring full compliance with food safety, HACCP and health & safety standards
Driving efficiency and minimising waste in a sustainability-focused environment

Proven experience as a Sous Chef or Senior Sous Chef in a high-volume kitchen or banqueting/events environment
Strong leadership skills with experience managing and developing teams
Solid understanding of menu planning, food costing and large-scale production
In-depth knowledge of HACCP and food safety standards
A calm, organised approach under pressure with excellent attention to detail
Passion for delivering high-quality food in a fast-moving, collaborative environment
