Full Job Description

  • Run your section for the ENDO omakase, preparing and presenting courses to the highest standard
  • Work at the counter in front of guests, with the composure and care the experience demands
  • Handle premium seasonal ingredients with respect, from fish butchery and ageing to rice and garnishes
  • Lead on prep, ordering and stock for your section, keeping everything immaculate and organised
  • Support and train commis chefs, and work closely with Chef Endo and front-of-house to deliver a seamless experience

    Someone who genuinely values connection with your team, because in a space this small we rely on each other completely
  • Respectful, warm and calm, with the guests, with the craft, and with the people you work alongside
  • Experienced in a high-end kitchen, with a deep interest in Japanese cuisine (experience in Japanese or omakase-style cooking is a strong plus)
  • Precise and proud of your work, with high standards and attention to detail
  • Confident running your section, and generous in guiding and supporting junior chefs
