Full Job Description

  • Run and maintain the grill section confidently during busy services.
  • Cook steaks, meat, fish and other grilled dishes accurately to the required temperatures and specifications.
  • Demonstrate excellent knowledge of meat cuts, cooking temperatures and resting techniques.
  • Manage charcoal, heat zones and grill temperatures effectively throughout service.
  • Maintain speed, organisation and consistency during high-volume services.
  • Complete daily mise en place and ensure the section is fully prepared before service.
  • Maintain high standards of food presentation, quality and portion control.
  • Follow all food safety, HACCP, allergen and hygiene procedures.
  • Minimise waste and support effective stock rotation and food-cost control.
  • Work closely with the Sous Chefs, Head Chef and wider kitchen team.
  • Keep the section clean, organised and professional at all times.

    The successful candidate will have proven experience working on a high-volume grill section, with particular confidence using a charcoal grill and cooking premium meat and fish to a consistently high standard., Previous experience as a Chef de Partie or Senior Chef de Partie.
  • Proven charcoal-grill experience is essential.
  • Experience in a busy, high-volume restaurant kitchen.
  • A strong understanding of meat cookery and steak temperatures.
  • The ability to remain organised and perform effectively under pressure.
  • Reliability, punctuality and professionalism.
  • Strong communication and teamwork skills.
  • Passion for quality ingredients and consistent execution.
  • A positive attitude and willingness to develop within the kitchen team.
    • This position requires genuine grill experience. Candidates with previous charcoal-grill experience will be strongly preferred.

    £12.78 - £15 hourly
