Full Job Description

  • Removing skin, hide, hairs, internal organs

  • Cutting/sawing carcasses into manageable portions

  • Removes bones, gristle, surplus fat, rind and other waste material

  • Cut carcass parts into chops, joints, steaks for sale

  • Prepares meat for curing or other processing

  • Cleaning tools and work surfaces

  • Clean toilets, urinals, hand basins, kitchen sinks

  • Full knowledge and experience within the industry, particularly with Lamb & Poultry

  • Must be able to carry out the full deboning process

  • Must be able to carry out trimming to a high standard

  • Prepare standard cuts of meat for sale

  • Packaging meat and storing it correctly

  • Discussing different cuts with customers, including how to cook and safely store them

  • Ensuring that all workspaces are sanitised to meet government health & safety guidelines

  • Follow food safety regulations and guidelines

  • Previous butchery experience is required for this role and flexibility in working hours is preferred.,

  • QUALIFICATIONS/KNOWLEDGE:
  • Minimum 2 years butchery experience

  • Knowledge of food preparation techniques and culinary skills

  • Familiarity with food safety regulations and practices

  • Strong attention to detail and ability to work with precision

  • Excellent communication and customer service skills

  • Understanding of how to maintain high hygiene standards, including correctly washing and storing meat cutting tools
