Title: Head Chef
Responsible to: Matron

GENERAL

The Head Cook is responsible for the planning, preparation and cooking of meals for Residents (also for staff and out meals, where applicable) and to maintain clean and hygienic standards within the kitchen area.

Main duties

  • To ensure that all food prepared is of the highest quality.
  • To plan menus, following careful consideration of Residents preferences and any special dietary needs.  This will involve discussion with the individual Residents, and Care Home Manager/Matron.
  • To order and control stock, in accordance with the budget set.
  • To ensure that the strictest levels of hygiene are enforced within the kitchen and food storage areas, in accordance with Health and Safety standards, keeping records, as required; i.e., temperature charts.
  • To prepare rotas and supervise all kitchen staff, undertaking any necessary training, especially in respect of Hygiene and Health and Safety.  To ensure all kitchen staff hold a current Basic Food Hygiene Certificate.
  • To pay particular attention to the safety of staff within the kitchen areas and the safe operation of equipment.
  • To maintain equipment in a clean condition and in good working order.    To report all defects to the Care Home Manager/Matron.
  • To initiate any disciplinary action involving members of the kitchen staff, as may be necessary.
  • To attend any agreed courses that would be beneficial to the individual, the Residents or the business.
  • To undertake any other task, if requested to do so by the Care Home Manager/Matron.
